My kids used to eat broccoli raw. No joke, like rabbits or whichever kind of animal likes to gnaw on raw vegetables. I, too, enjoy a bit of broccoli but with a dipping sauce. And bacon, well, what is there terrible to say about bacon? This broccoli bacon salad recipe is a winner for the whole family at any time of year.

Broccoli Bacon Salad Ingredients

Ingredients

  • 5 cups fresh broccoli florets, cut into small floret pieces
  • 1 cup cooked and crumbled bacon
  • ½ cup roasted pepitas (an amazing addition to any salad!!)
  • 1 cup small cheddar cubes
  • ¼ cup chopped red onion

For the dressing:

  • ¾ cup mayonnaise
  • ¼ cup powdered sweetener
  • 1 tablespoon white vinegar
  • salt and pepper, to taste

How to Make Broccoli Bacon Salad

  1. In a large bowl, toss together the broccoli, bacon, pepitas, cheese, and onion.
  2. In a jar with a lid or bowl, shake (or whisk) together with the ingredients for the dressing. Pour over salad. Toss salad until everything is completely coated.
  3. Store in an airtight container in the refrigerator for one hour to overnight. Best eaten within 3 days.
