Low Carb Dill Garden Salad

I love my little herb garden and since I am on a salad recipe kick, I had to try a garden salad with dill. Dill is one of my all-time favorite flavors to add to salads such as this one below and chicken salad. This dill salad is low carb and easy to make.

What is Dill?

As one of the world’s healthiest foods, dill is often at the top of my list to add to a variety of recipes. Dill contains many nutrients beneficial to the body, particularly with digestion. I have also heard that dill abets the good old bad breath ailment. Heck, why not?

As for specifics, one cup of dill offers significant daily does of vitamins and nutrients including Vitamin C, Manganese, Vitamin A, Folate, and Iron. Many of us suffer from nutritional deficiencies and making a few daily changes really make a huge difference.

Dill is also rich in naturally forming antioxidants that naturally form in your body and protect your cells. Antioxidants help fight inflammation and can be beneficial to certain types of arthritis, heart disease, neurological disease, and even some types of cancer. What is Dill Good For?

If you’re looking to cook with dill, it pairs really well with seafood. My sister makes a mean salmon dish with dill, capers, and lemon.

I personally appreciate dill in my egg salad and as a topping on deviled eggs. I am also a huge fan of tzatziki dip and dill fits the bill adding flavor and aroma to the dish.

Dill weed really is the perfect topping for a variety of meat dishes and many roasted vegetables such as carrots and zucchini. And, of course, dill weed in salads is a lovely combination.

Ingredients

  • 2 English cucumbers
  • 1 red bell pepper diced
  • 2 plum tomatoes seeded and diced 
  • 1/2 small red onion seeded and diced 
  • Dressing
  • ¼ cup healthy mayonnaise 
  • 1 teaspoon powdered erythritol
  • 2 teaspoons white vinegar
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • 1 tablespoon freshly snipped dill

Instructions

  1. In a bowl or jar, whisk (or shake) together with the ingredients for the dressing.
  2. Set aside.
  3. In a large bowl, toss together the vegetables.
  4. Drizzle the dressing over the salad and toss to coat.
  5. Serve immediately or refrigerate overnight.
